Delicious Raw Apricot and Coconut Slice
This is my “go to” wholesome slice for lunchboxes and gifting. It’s one of those things that doesn’t really last too long as everyone keeps taking another piece…but I love that. There’s nothing better than making something that our kids and friends love.
From the pantry
1 cup (180grams) sulphite free dried apricots
2 tablespoons honey
4 tablespoons melted coconut oil
1/2 cup desiccated coconut
1/2 cup shredded coconut / coconut flakes
1 cup of your choice of nuts (macadamia or almonds work well)
optional 35 grams good quality chocolate
makes a 15 cm x 15 cm pan slice
Let’s begin
Begin by processing the apricots in a food processor until they almost form a paste, I like to keep them with a little texture rather than a smooth paste.
Add honey and melted coconut oil and process for a few seconds to combine.
Add in remaining ingredients and pulse until your preferred consistency – this slice works well leaving some chunky nuts and coconut pieces.
Line a baking tray with baking paper and pour in mixture.
Using your fingers push the mixture into the baking dish, compacting it down to stick it together.
(optional) If you feel like a little extra deliciousness, melt the chocolate (in a glass dish over a saucepan of boiling water) and once melted spread a thin layer over the slice.
Place in the fridge for a few hours to set. If in a hurry try the freezer!
